Fascinated by the art of service since the age of 16, Catherine Redondo trained at the most prestigious Relais & Châteaux before joining the gourmet restaurant La Saulire in 1999, where she orchestrates each moment with the highest care, offering her loyal guests an experience defined by refinement. In 2019, alongside her husband Benoît Redondo, she acquired the establishment, and continues to uphold the spirit of authenticity and excellence that has made La Saulire so renowned.
